Line a loaf tin and preheat oven to 180 °C |

Melt butter and demerara sugar until a carmel has formed. |

Pour into tin and carefully place the apple slices over the caramel. |

Combine all the sponge ingredients, apart from the raisin and apple cubes, beat until thoroughly combined. |

Fold in raisins and apple cubes. |

Pour over the caramel and apple slices. |

Carefully place your decorative apple slices on top and bake for 40-50 minutes (until a tooth pick comes out clean). |

Leave to cool completely before removing from tin. |

Dust with icing sugar and enjoy! |
